    The propane would make it cook faster, & some say cleaner. At least Hank would agree on that cartoon. If you don’t have the patients for charcoal that would be the way to go. And yes would chips would be good in the pan, but remember to let the chips soak! If you don’t the wood will burn. Of course burn, but not get the effect that you acquire. Try it & let me know how it turns out.

    Would this work on a propane grill with a pan full of wood chips or would the gas make the meat all gross over such a long time?
